A rich, alcohol-free version of the New Orleans classic.

Ingredients

  • 2 Bananas: Sliced lengthwise, then halved crosswise.

  • 4 tbsp Butter: Unsalted is best to control the salt.

  • 4 tbsp Brown Sugar: Dark brown sugar adds deeper molasses flavor.

  • 1 tsp Cinnamon: (Optional) Ground.

  • 2 tsp Vanilla Extract: High quality for the best aroma.

  • 1 tbsp Water: To smooth out the caramel.

  • Vanilla Ice Cream: For serving. 

Instructions

  1. Melt: In a large skillet over medium heat, melt the butter until bubbling.

  2. Dissolve: Stir in the brown sugar and cinnamon. Mix and let it bubble for about 30 seconds until it forms a smooth, grainy paste.

  3. Caramelize: Add the banana slices in a single layer. Cook for 1–2 minutes, gently flipping once, until the fruit is softened and glazed.

  4. Finish: Add the water and vanilla extract. Stir gently as the sauce thins into a glossy syrup. Cook for another 30–60 seconds.

  5. Serve: Immediately spoon the warm bananas and sauce over generous scoops of vanilla ice cream. 

Tips for Success

  • Banana Ripeness: Use bananas that are yellow with just a few brown spots. If they are too ripe, they will turn to mush in the pan.

  • The "Secret" Stir: To get a deeper flavor in an alcohol-free recipe, let the butter and sugar sit for an extra 10 seconds without stirring to allow the sugar to slightly brown.

  • Sauce Consistency: If the sauce feels too thick, add one more teaspoon of water. For a richer 2026 twist, replace the water with heavy cream.
